Dark Chocolate Amaretto Cupcakes

This, I think, is truly an amazing creation. Once again I was in the mood to bake cupcakes, and this time I’m expecting my sister to be in town so the cupcakes are justified. Both my sister and Jerry love chocolate, so I decided on dark chocolate cupcakes filled with chocolate chips, walnuts, and the best ingredient of all, amaretto. I was too lazy to make my cupcake mix from scratch so I used good ole Betty Crocker’s dark chocolate mix and followed the box for the water, oil, and eggs. To ensure the cupcakes were super soft and moist I put a small bowl of water in the oven and preheated the oven to 15 degrees higher than the instructions. This cut the baking time from about 18 minutes to 10 minutes and really sealed in the moistness. It is important not to over bake them; start checking them periodically once they look about ready on top and take them out as soon as the toothpick comes out clean.
 
Ingredients:
1 box Betty Crocker dark chocolate cake mix
1 1/4 cups water
1/2 cup vegetable oil
3 eggs
1 1/2 dark chocolate chips ( I know, ridiculous!)
1 cup crushed walnuts
7 tablespoons amaretto liquor
whip cream icing
*makes about 24 cupcakes
