Caprese Dressing

Dress up your caprese salad with this spicy dressing. I used big yellow tomatoes, any color/size tomatoes will work for this dish, and I bought fresh large buffalo mozzarella balls in water and slices them about as thick as the tomatoes. To season it all I made up this dressing.

2 teaspoons olive oil
1 tablespoon red wine vinegar
1 tablespoon balsamic vinegar
1 teaspoon oregano

1/2 jalapeno pepper seeded and finely diced
~ 1 teaspoon fresh ground pepper
salt to taste
Directions: Combine all ingredients in a jar and mix vigorously. Pour over arranged tomatoes and buffalo mozzarella. Top with some fresh basil and enjoy. Whenever I add dried herbs to my dressing I try to make it in advance. This allows the dried herbs to absorb water from the dressing and they look, feel, and taste more fresh.
