Summer Cucumber Salad
This is a perfect summer salad with its fresh cucumbers and citrus dressing.
1 cup thinly sliced radishes
1/2 cup finely chopped orange bell pepper
1/4 cup curly leaf parsley
2 English cucumbers, thinly sliced
1 cup white quinoa, prepared (I added quinoa to make the salad a bit heartier making it a good dinner option)
1 teaspoon finely grated lemon rind
2 tablespoons fresh lemon juice
1 tablespoon extra virgin olive oil
1 1/2 tablespoon white wine vinegar –> I used Champagne vinegar
Salt & Pepper to taste
Directions: Combine first 5 ingredients in a large bowl. Combine remaining ingredients in a cup, stirring with a whisk or fork until well combined. Toss the salad with the dressing. Serve at room temperature or chilled. I served this salad with orange roughy fillets which were seasoned in Italian dressing for a few minutes before going on the pan. Any other flaky fish would go well here or chicken.
