Sweet & Spicy Chicken Marinade

1 1/2 Tbsp Olive Oil
2 Tbsp Balsamic Vinegar
2 Tbsp Honey
1/2 Tsp Basil, dried
4 Garlic Cloves, minced
Salt & Pepper. to taste
Crushed Red Pepper
4-6 Boneless, Skinless Chicken Thighs
Combine all the ingredients for the marinade. Coat the chicken thighs and let them sit in the marinade for several minutes. Cook the chicken on a pan or on the grill. Serve with some grilled veggies. Keep the veggies simple, just a bit of salt and pepper.
This chicken is also delicious over a kale salad. Kale has been my new obsession this year. To use it in salad I blanch the kale. I then mix it with halved cherry tomatoes, cucumbers, grated Parmesan cheese, and Italian dressing. This makes for a delicious, healthy, and filling salad.
